Morello Cherry Mint Spritzer
Serves 2
2 (heaping) tablespoons of morello cherries in light syrup
3 tablespoons of morello cherry juice
3 tablespoons Rose’s Sweetened Lime Juice
5 mint leaves
Champagne or Prosecco
Mint leaves, garnish
Combine the cherry juice, sweetened lime juice and mint leaves in a glass. Muddle until you can smell the mint.
Divide the cherries between 2 glasses. Then pour the juice mixture into each glass.
Top off each glass with champagne. Garnish with mint leaves.
Serve
The Morello Cherries came in a big jar hence the multiple recipes (view the other one here) with the same main ingredient. I’ve been trying to think of interesting ways to use up that jar. One drink at a time. This one was a big hit.
